Why Southern Cornbread?

Southern cornbread holds a special place in the hearts of many for its simplicity and versatility. Made with just a handful of ingredients, including cornmeal, flour, whole milk, and a touch of sweetness, this humble bread delivers big on flavor. It’s the perfect accompaniment to a wide range of dishes, from savory stews to indulgent breakfasts.

What Is Sweet Milk In Cooking

The original recipe used the term “sweet milk.” The term “sweet milk” is commonly found in older recipes due to historical context and regional variations in dairy terminology. Before modern refrigeration and dairy processing techniques became widespread, milk was typically sourced directly from cows and consumed fresh, without undergoing fermentation or souring.

As a result, this fresh milk was often referred to simply as “sweet milk” to distinguish it from other types of milk, such as buttermilk or sour milk, which were produced through intentional fermentation or souring processes.

Thus, in older recipes, the term “sweet milk” served as a standard descriptor for the fresh, unaltered milk commonly used in cooking and baking during those times.  So in other words, it’s referring to whole milk.
