Ingredients

  • 9 green tomatoes – medium finely chopped
  • 1 head of cabbage – medium chopped
  • 2 green or red bell peppers chopped
  • 1 hot pepper – jalapeno or Serrano chopped
  • 1 c celery chopped
  • 4 med onions – yellow or white chopped
  • 1 tbsp celery seed
  • 1/8 tsp cinnamon – ground
  • 1/8 tsp allspice – ground
  • 1 tbsp salt
  • 1.5 c sugar – granulated
  • white vinegar

Instructions

  • Finely chop tomatoes and allow them to drain in a colander for 15-20 minutes
  • Chop other vegetables and add them to a large pot
  • Add spices, salt and sugar to the pot
  • Add drained tomatoes to the pot
  • Cover the mixture with white vinegar
  • Turn the heat to low and allow the mixture to simmer
  • When the mixture comes to a boil, put the mixture in hot sterilized jars and seal

Notes

Use as a condiment or topping for hot dogs, hamburgers, and sandwiches or as a side salad / appetizer
