Equipment

Ingredients

  • 1 lb Italian Sausage – choose your old heat preference
  • 5 cloves Garlic – minced
  • 1 lg Yellow onions – chopped
  • 1 16 oz Canned Italian pear tomatoes – small pieces
  • 2 36 oz Beef broth
  • 1 1/2 cups Red wine You can use water as a substitute
  • 1/2 tsp Basil
  • 1/2 tsp Thyme
  • 3 tbsp Parsley – chopped
  • 1 Bell pepper – chopped
  • 2 Zucchini – sliced
  • 3 cups Cheese tortellini noodles Use bowtie noodles as a substitue

Instructions

  • In a large Dutch oven brown the sausage and drain the excess fat
  • Add onions and garlic and cook until clear
  • Stir in tomatoes, broth, wine, and spices/seasonings
  • Simmer uncovered for 30 minutes
  • Add green peppers, zuchinni, parsley, and noodles
  • Cover the pot and simmer for an additional 25 minutes

Notes

Garnish the soup with fresh parmesan cheese or grated swiss cheese.  Yum!
