1 Rick CookerThis is my all-time favor rice cooker
Ingredients
1lbBacon
1bagBlack Beans
1 Sweet Onion - chopped
8clovesGarlic - minced
1Bell Pepper
1/8tspBlack Pepper
1/8tspThyme - dried
1/2tspCumin - ground
1/2tspOregano - dried
1/2 tspSalt
1tbspVinegar - white
1.5tbsSugar
3 pkgsSazon Goya Ham Seasoning
Instructions
In the pressure cooker, put 1 small bag of black beans covered by about 4 fingers of water above the beans.
Pressure cook your beans for about 30 minutes
Cook bacon in a large skillet until fully cooked
Remove bacon and set aside - keep bacon grease in the skillet
In the skillet, add onions, garlic, bell pepper, black pepper, thyme, 2 packages of Sazon Gayo ham flavoring, cumin, and oregano
Mix and cook until onions are clear
Add skillet mixture to beans in the pressure cooker
Add salt, vinegar, and sugar - mix well over low heat for about 5 minutes
Add 3rd package of Sazon Goya ham seasoning
Allow to cool and tweak to your taste using salt, sugar, and/or vinegar
Eat as is or enjoy over rice
Notes
It’s easy to over-sugar, over-salt, or over-vinegar this recipe.Take it slow when making adjustments at the end. Serve over rice and garnish with fresh herbs
