Mexican Cornbread Recipe

This variation on the traditional Southern Cornbread is full of flavor and packs a tiny bit of heat!

Equipment

  • 1 9x13 baking dish

Ingredients

  • 1 c cornmeal
  • 1 c whole milk
  • 1/2 tsp baking soda
  • 1 tsp salt
  • 1 c cream style corn
  • 1/2 lb cheddar cheese (save half to top the bread) grated
  • 3 jalapeno peppers 2 finely chopped - 1 thinly sliced
  • 1 c green onions finely chopped
  • 2 eggs
  • 1/4 c oil vegetable

Instructions

  • Preheat over to 350 degrees
  • Combine all ingredients in a bowl - save the sliced jalapenos for topping
  • Heat oil in a large skillet over medium heat
  • Pour batter into the skillet and stir immediately until cheese is melted
  • Pour batter from the skillet into a 9x13 baking pan
  • Top with the remaining half of the cheese
  • Bake for 40 minutes
  • With 20 minutes remaining, top with the sliced jalapenos
